Role of Alpha-Tocopherol, Ascorbic Acid, Citric Acidand EDTA as Oxidants in Model Systems

چکیده

The effects of four widely employed “antioxidants” on iron-mediated hydroxyl radical formation and lipid peroxidation were studied in aqueous model systems. Iron and copper served as catalysts for the reactions which oxidized ascorbic acid and alpha-tocopherol and reduced oxygen. Ferrous ion spontaneously reduced oxygen to 0; (superoxide anion radical) which led to .OH (hydroxyl radical) and Hz02 generation and lipid peroxidation. Precipitation or sequestration of iron greatly depressed these oxidative events. Complexation by EDTA and citric acid, however, formed catalytically active iron chelates. The concomitant increase in iron solubility explained the substantial enhancement of iron-driven redox reactions by EDTA and citric acid.

In Vitro Effect of ?-Tocopherol, Ascorbic Acid and Lycopene on Low Density Lipoprotein Glycation

Nonenzymatic glycation of low density lipoprotein (LDL) is a reaction of glucose and other reducing sugars with apolipoprotein B100 (apo-B100) lysine residues. In diabetes, this reaction is greatly accelerated and is important in the pathogenesis of diabetic complications. The objective of this study was to investigate in vitro effects of ?-tocopherol, ascorbic acid and lycopene on LDL glycatio...

Effect of ascorbic acid and alpha-tocopherol supplementations on serum leptin, tumor necrosis factor alpha, and serum amyloid A levels in individuals with type 2 diabetes mellitus

Objective: Diabetes mellitus Type 2 is one of the most widespread chronic metabolic diseases. In most cases, this type of diabetes is associated with alterations in levels of some inflammatory cytokines and hormones. Considering anti-inflammatory properties of plant extracts rich in ascorbic acid (vitamin C) and alpha-tocopherol (vitamin E), anti-diabetic properties of these two well-known anti...

Modulation of antioxidant compounds in organic vs conventional fruit (peach, Prunus persica L., and pear, Pyrus communis L.).

Despite the increasing interest in organic products, knowledge about how different levels of fertilization affect nutritionally relevant components is still limited. The concentration of polyphenols and the activity of polyphenoloxidase (PPO), together with the content in ascorbic acid, citric acid, and alpha- and gamma-tocopherol, were assayed in conventional and organic peach (Prunus persica ...
